Profitability

Hospitality profitability consultancy — protect margin, not just revenue

Most venues do not have a revenue problem. They have a margin problem hidden inside a busy week — dish mix, pricing drift, over-buying and unmanaged labour hours.

Symptoms

You are probably here because

These are the patterns that bring owners to this conversation.

  • Gross profit moves month to month with no clear reason
  • Price rises have been absorbed by suppliers, not passed through
  • Best-selling dishes are the worst performing on margin
  • Labour cost climbs faster than covers

What changes

  • Margin per cover understood at dish level
  • Purchasing consolidated with negotiated specifications
  • A weekly margin report an owner can read in five minutes

The work

How we approach it

Dish-level engineering

Every item mapped by popularity against contribution, so the menu is redesigned around what actually pays.

Pricing architecture

Price bands, anchors and portion logic rebuilt so increases land without damaging perceived value.

Cost of sales control

Supplier consolidation, spec discipline, yield testing and waste routines that hold once we leave.

FAQs

Questions owners ask

How quickly can margin improve?

Menu, pricing and purchasing changes are usually the fastest levers because they do not require capital. Structural change to format or brand takes longer and is planned separately.

What data do you need?

Trading P&L, till or PoS item-level sales, purchase invoices or supplier statements, and rota or payroll hours. If some of that is missing, the first job is making it available.
